ASPARAGUS SALAD MEDLEY
Prep time: 10 minutes
1 can (15 oz.) S&W® Asparagus Spears, drained
1 cup red and yellow cherry tomatoes, halved
1 can (15 oz.) S&W Small White Beans, drained
1/2 cup diced cucumber
1/4 cup sliced green onions
3 Tbsp. white wine vinegar
3 Tbsp. olive oil
2 Tbsp. chopped parsley
1. Arrange asparagus on serving plate. Combine tomatoes, beans, cucumber and onion.
2. Combine vinegar, oil and parsley; spoon over salad.
4 to 6 servings
